Black Bean Salad

 
 
 

Ingredients

½ cup thinly sliced red onion

1 medium ripe avocado, pitted and roughly chopped

½ cup fresh cilantro leaves

¼ cup fresh lime juice

2 Tbsp. extra-virgin olive oil

1 garlic clove, minced

½ tsp. salt

8 cups mixed salad greens

2 medium ears fresh corn, kernels removed, or 2 cups frozen corn, thawed and patted dry

1 pint grape tomatoes, halved

1 (15-oz.) can reduced-sodium black beans, drained and rinsed

Directions

  1. Place the onion in a medium bowl and cover with cold water. Set aside

  2. Combine avocado, cilantro, lime juice, oil, garlic, and salt in a mini food processor.

  3. Process until dressing is smooth and creamy, scraping down the sides as needed.

  4. Just before serving, combine salad greens, corn, tomatoes, and beans in a large bowl.

  5. Drain onions and add to salad greens mixture. Add avocado dressing, and toss to coat.
