Broccoli with Dijon Vinaigrette

 
 
 

Ingredients

2 Ib. fresh broccoli

2 tsp. olive oil

¼ cup finely chopped scallions 

1 tsp. fresh tarragon

½ tsp. dry mustard

3 garlic cloves, minced

2 Tbsp. red wine vinegar

2 Tbsp. water

1 Tbsp. Dijon mustard

½ tsp. freshly ground black pepper

½ tsp. salt

 

Directions

  1. Remove the broccoli leaves and cut off the tough ends of the stalks; discard them. Wash broccoli; cut into spears.

  2. Arrange in a steamer basket over boiling water. Cover and steam for 6 minutes or until tender-crisp. Place in a serving bowl; keep warm.

  3. Heat a small saucepan over medium heat. Add oil to pan; swirl to coat. Add scallions, tarragon, dry mustard, and garlic; cook 3 minutes, stirring frequently.

  4. Remove from heat, whisk in vinegar, water, Dijon mustard, black pepper, and salt. Drizzle over broccoli, tossing gently to coat.
